This cake is perfect if you are looking for something a little different then pumpkin pie. I especially love it the next morning for breakfast.
2/3c. veg oil
1/2 c. applesauce
1 (15 oz) can pumpkin (libby's is best)
1 tsp vanilla extract
2 1/2 c. granulated sugar
2 1/2 c. flour
1 tsp baking soda
2 tsp. ground cinnamon
1/2 tsp salt
Preheat oven to 350 degrees F
In a large bowl add oil, applesauce, pumpkin, eggs and vanilla. Beat until creamy
In a separate bowl combine flour, sugar, baking soda, salt and cinnamon. Add to pumpkin mixture and stir until just combined.
Pour batter into a greased and floured bundt pan
Bake for 1 hour or until toothpick inserted comes out clean.
